A chisel used with the bevel toward the end grain will drive the waste away. A chisel with the back toward end grain will drive into the end grain increasing the cutting force needed and causing a larger undercut which will no doubt tear out a big chunk of the end grain.

Turn the chisel around and chop a set of dovetails.
