I've actually bought plans pretty much from anyone and then bought a guitar to have in hand to use them. The same as with planes, it's just easier to build something when you have great pictures from all angles or an example in hand at least to base things on.

Stew mac has a video series on uke building that they posted on youtube, and though they probably have more expensive plans than anyone else, their stuff is generally thorough and good quality (can't speak to their kits other than that they're overpriced for guitar, but since you're not looking to build a kit, no problem).

Other than that, it doesn't look like there's a huge volume of books like there are for guitar (e.g., you can get a book written by benedetto describing the entire archtop making process in detail without hiding things from the reader).
