Agree with all of that (especially the implication that it's nicer to just dry wood low tech and not worry about perfection when you have a supply that makes re-dos financially viable).

And definitely on beech itself as a wood - when it's sawn well, it's a nice stand in for maple, but much nicer to work. Not sure why there isn't more appeal to quartered in 4/4 and 8/4, which don't seem to be a problem to dry commercially.
