Black Walnut

Black walnut has a pretty good range of hardness and density in our area. I would take a gouge to the end grain or something to get an idea how crisp it is. The lightest stuff isn't much harder than poplar.

Also if the darkness is a concern, it will lighten up faster with no finish, which might be preferable anyway.
