Since you brought up the issue of beech v. exotics…I am obviously a big fan of beech, but if you want to try an exotic (for next year or whatever), I'd recommend rosewood. Not cocobolo, real rosewood. South American is the most prized, but the Indian works very well too. It works by hand beautifully (and easily), and performs very similar to beech, but it is a bit heavier and a lot more stable. That extra stability doesn't matter much for day to day planing, but it might matter in a competition. It wouldn't surprise me if you got to Brooklyn and found that the beech had moved just a bit.
