I like the cherry table and agree with you on the Jarra one. The Jarra design is a bit dated.

Walnut goes well with maple. It is one of the few mixed wood combinations that make any sense to me. Stop by and we will see if I can find a single board for your top. ;)

Have you finished, or seen finished, walnut with oil before? And by oil I am taking the description literally, "oil", like linseed and not oil that in fact is a formulated varnish?

I don't think there is any reason to ever use an oil finish on walnut. The look people think of for an "oiled" finish can be achieved with an oil based varnish. The result is more durable and arrived at quicker.
