Yes, dish detergent removes the oil (and much of the steel swarf goes with it). Since the stone contains no oil buildup when new, and the detergent does not effect the stone itself, I say this does not harm the stone.

One could argue that it sets one back a bit if the oil build up is seen as beneficial, and that would not be an unreasonable point to make. Since I use kerosene rather than oil, I've probably not experienced the wonderful convenience of that oil buildup.
