I have used the pickling stain. It works reasonably well but like most staining there is a certain amount of splotching so I don't particularly like this approach. However, I also don't like the look of natural/aged plain sawn maple so I was "forced" to use this approach. I really would like to play around with two part bleach though, I might be interesting. I don't have room for spray equipment nor do I have a way of spraying cleanly. It's true that my method may take a bit longer than spraying but with careful prep it results in a really perfect finish--the proverbial "smooth as a baby's bottom".
