It only needs to be as flat as you want the biggest thing you will hone or flatten. So for chisels and blades, less flat needed than plane soles.

I would cut it, contamination will probably be a problem if you do not. If you plan to do some flattening, wait until after you cut it as it could move as a result of cutting.
