Excellent account replete with detail (as always)! I have never been able to maintain discipline about reserving diamond plates for specific uses, though I may try your plan of having two.
Interesting your comment about durability of Atoma. I've noticed the opposite in the DMT stones I've had (the expensive mono crystalline with a flatness spec on them). They seriously lost cutting power when using them for sharpening, but then I wasn't careful about using a cutting fluid, and that was likely a contributor.
This Atoma is crazy fast right now, but we'll see in year or so.
Have you ever used a 1200g Atoma?
