Inlaying large wood pieces *LINK*

Hello all,
I'm making some "cornhole" boards for my best buddy (best friends since we were 4 years old). He's a whiskey connoisseur so I thought it would be nice to use a Bushmills barrel that I have, for accents. Here is the main problem I'm having. In order to keep the aesthetic of the barrel, I can't sand it flat, so the boards be scalloped like this:
