What makes the usual approach risky here

This lumber is air dried, whatever that means in terms of %MC. If it is going to dry significantly after resawing, based on my experience with this situation, I would do what I recommended below. A drawer will not be more than 8" tall. It will not be difficult to resaw cuttings 8" tall or less from rough lumber. After drying further every bit of original thickness may be necessary to achieve a flat finished drawer side.

BTW, if something doesn't leans up on one side it can make a back. Or it can make a thinner bottom. Or it can make a panel for the frame and panel back.
