Mixed wood cutting board questions

I have a lot of hardwood scraps. Many pieces less than 12" long. Cherry, oak, walnut, poplar and Osage orange. I use them where I can, but they tend to accumulate. Just turned some of the cherry ones into a nice end grain cutting board.

Was thinking about making more cutting boards to give away or sell and to consume more scraps. So, what do you think of mixing the various woods into a single board? What glue would you use? Which woods would you avoid? How about knots in the final product?
