Ebonizing Red Oak questions

I have built a table out of Red Oak. Considering ebonizing it with a solution of vinegar and steel wool. Made some about a year of two ago and it turned the sample BLACK. Anyone have any experience with this stuff. Can I add more vinegar and reduce the effect? How about water?
