Drying red oak slabs questions

A guy gave me a 3 huge red oak logs and I had them cut into slabs on a Lucas mill. Stacked the in an open shed (huge industrial shed) with stickers. Been there about three years and have started to pull some out and use them.

I am finding them to have checks/cracks in the faces. These seem to be from an 1/8" wide down to hairline cracks. The ends were sealed with heavy latex paint.

These slabs were about 2 1/2 to 3" thick, some are close to five feet wide and they were stickered with 3/4" dry stickers. I don't remember the season they were cut but it was not winter.

So, what did I do wrong? They were stacked and stickered in open air out of the rain and sun and done promptly. What could I have done to eliminate the checking?
