B&W from Digital color

How do you get B&W from digital color pics?
My D80 can do that with the files it creates, but in our family there are also 3 Canons, a Minolta and older Nikon (5700) I spent an hour in Photoshop 6 and gave up cannot figure it out.
Any info much appreciated,
