The spalting/rotting process stops when the moisture level goes below 20 %.

The problem is getting the moisture down inside the wood where the spalting/rotting is happening, having the outside being dry does not help with the inside for quite a long time.

So really you can’t have it just sit and wait till you have time, roughing it out to make the wood thin and have it dry rather quickly is the answer to stop the spalting/rotting process.
