I've made some end-grain turned goblets with hard maple. Any close grained hardwood should be fine. Because there is a lot of short end-grain the liquid does tend to weep alright even with close-grained wood. I just used some polymerized tung oil which I likely got at Lee Valley for the finish and to seal them. Any film finish would work.
