Yes, there are pitfalls. The screws are there mostly to make sure the hinge cheeks don't slip past the hinge mortise. The majority of the strength of the hinge connection is in the interface between the sides of the mortise and the edges of the hinge. That cheap trick limits the support on the door side to only the threads of the screws into the door.
