If I understand correctly, in essence you are going to make a table top and fasten the table top to something under it. A table top assembled from the flooring will be no different than conventional.

There is, however, a problem to solve. You must have equal access of air to both sides or it will seasonally cup. You can't lay it on a solid base with no air gap. Finish both sides equally. And in fastening, you will have to accommodate seasonal expansion and contraction.
