Cherry T&G flooring ()

Others have mentioned the various drawbacks - chamfers, spillage, expansion/shrinkage, etc.

What I'd do is glue the flooring into a panel - using a waterproof glue like Titebond III - and treat it like a glued up tabletop. Fasten it to the bar from underneath, using slotted screw holes to allow for the movement. Maybe - depending on the original finish - scuff the finish a bit and apply a couple coats of Behlen's Rock Hard Tabletop Varnish to it.
