Anything starting to gel is not to be used. A multitude of problems could result. Gelling is an indication of an oxygen leak and oxygen can lead to many decompositions and polymerizations which could affect appearance or durability.

Shellac- harder to tell when it is unfit to use and I have little experience dealing with its personality.
