I was going to suggest something similar, and the more I read your strategy, the more I agreed with it. I think I would do it exactly the same way. That's basically the same way I built my workbench. (Workbenches only need to be more than two inches thick along the front few inches, where you are chopping joinery.)

There is only one style of table that would benefit from a three inch thick top: a Nakashima style table.
