Bill, Smoked BBQ is one of my hobbies. I have a dedicated Smoker (Bradley). As others have suggested, remove the membrane before cooking. I always cook my ribs at aprox. 220 degrees for a total of 6 hours. If you listen to competition BBQ guys, they also cook ribs for 6 hours. During the 6 hours, I typically run smoke for about 3-3 1/2 hours. My ribs always come out tender and juicy. I then take them out of the smoker and apply sauce and finish on high heat (grill) for about 5 minutes to caramelize the sauce.
