I smoke them for 2 1/2 hours with then take them off, slather them in BBQ sauce, wrap with aluminum foil with edges sealed then into an oven on a rack in a sheet pan. Cook at 200 degrees for two to 3 hours. Carefully open the foil after 1 1/2 hours, apply more BBQ sauce. Check after 1 hours to see if the meat is falling off the bones.

The smoking 2 1/2 hours of smoking will impart all the smoke flavor you need.

Basically, the same process will work for brisket.
