Lower temp for the smoke (more like 200ºF--remember that water boils off at 212ºF!), and increase the time to about 3 hours.

Then you need to wrap them tightly in foil and raise the temp to about 250ºF. I like to add a tablespoon or two of (apple cider) vinegar at this point. Give them another 3 hours or so like this--and it can even be done in the oven.

Just cooking them to a safe temperature is not sufficient--they have to be cooked for quite a while to break down the muscle fibers.
