Linseed oil starts out very yellow :D

I have used tried and true some, and you'll also find it a bit labor intesive for trim work I'd guess. Stuff is thick and gooey and won't really give you the results I think you're expecting.

I would suggest either a semi-gloss polyurethane or Danish oil, depending on if you want a film or not. Personally, I'd probably do the poly, good quality brush and thin coats and you won't have to worry about spraying. Wiping on a couple coats of Danish oil will be less work, but won't be quite as good a protectant as poly.

Once finishes are dry, they are pretty much all "food safe" or whatever, as long as they aren't pigmented with cadmium or lead or something like that :D
