I interpret your request for 'rustic' wood to mean that you're looking for wood that has aged significantly already. A good source for such wood is through barn demolition companies. These companies disassemble barns and salvage reusable wood (or store it to be reassembled elsewhere), and they typically stock very long planks of weathered softwood and large framing beams and joists. Though they often claim that their wood is furniture grade, floor boards is the most common application (the wood is planed and the grayed sides put face down).

If you're looking usable wood that is weather and has plenty of history, then these companies are an excellent resource. I don't know of any near LA, but I have included links to two companies for you to get a sense of this type of business.
