Your deep pitting is not the fault of the Evaporust. The pits are from the rust and they have been chemically altered to their full depth.

I have used citric acid and Evaporust to remove rust and prefer the Evaporust. The citric acid tends to etch surfaces and make them very dull. If the evaporust is scrubbed down right away the finished look isn't too bad to me.

What looks unnatural is a bright tool with deep silver colored pits, as if they were casting defects. I have flattened pitted soles and sides but the pock marks make shining akin to lipstick on a pig. Of course, pitted irons are either trash or ruler trick candidates depending on severity.
