A group of "experienced period furniture makers" could not tell the difference between polyurethane and shellac? Not so surprising. Many cannot tell the difference between a surface that is sanded and hand planed either.

I went to a Sapfm meeting once. A bunch of retirees sat around bragging about the wonderful things their router tables could do. They probably could not tell the difference between router mouldings and and mouldings from planes either.
