Water stains are stains that are dissolved in water. They could be traditional stains like walnut stain or logwood, or synthetic stains like aniline dyes. Because they are dissolved they penetrate the wood, and are also much clearer than pigment stains, which are really just thin paint.

Spirit stains or alcohol stains are stains that are dissolved in alcohol and also can be natural vegetable matter or synthetics. Some stains are soluble in both water and alcohol.
