Interesting story about the piano teacher! There’s another argument in favor of the ‘real project’ approach you’re taking.

Yes, the oak presents problems for first dovetails. But its contrary nature will quickly reveal weaknesses in technique, choice of chisel, and preparation of same. I wouldn’t carry this to the extreme of saying ‘pick the most impossible wood to learn on’. But the moderately difficult oak will have you further up the chisel learning curve than, say, poplar, which will forgive a chisel that is too wide, too blunt an angle, or not sharp enough for duty.
