We have plenty of pictures of period chisels with long thin bevels that wouldn't have held up to mortising without steepened bevels added.
The drawing on this page shows a rounded over back as well as the bevel top. Note the flat chisels shows a defined line showing a single flat bevel with a sharp transition.
