I wonder if it might hold up for paring only. I get that for the purposes of testing, you and Winston (and others) have focused on chopping, and durability is getting the most emphasis, but the possibility of reduced effort when paring is equally interesting, at least to me.
15° is kind of a pain to grind, but high teens is not so bad, and i could see doing that, honing at around 20°, and then buff or strop. Will try to give it a go soon.
