My work has been varied, all of the things you have mentioned. I have probably sharpened 50 to 150 tools per week, so around 5000 a year for decades. I had very good eyes when I was young, tested better than 20/20 also. When I was 49 I started using reading glasses for carving, but could still read the stock pages, which had small print.
It just could be that I sharpen often enough that the burrs are pretty small, but I know others who strop their tools, especially carvers.
