Great test Winston. I suspect a lot of people (like me, John, etc) have some interested in a non-motorized approach, so this is super useful.
One question: are you always honing at 30 for these tests? I know Dave stressed the idea of a sub 25 bevel prior to buffing, so just curious if you've tried that.
I hope--when I get around to unpacking my chisels--I can test both possibilities. I'm sure there are some tradeoffs between durability and reduced cutting resistance, and it will take some effort to find the happy medium.
