All traditional carving tools (well most...) are slightly fishtail in overall pattern. Not a true fishtail, which is more extreme and has the fishtail taper at the very front end of the cutting tool.

Note that the wonderful carvings done by Peter Follansbee are done with a mix of true carving tools and carpenter's firmer gouges. Peter doesn't seem to prefer one over the other - he seems to be more interested in the sweep and width since many of his patterns are derived solely from these two parameters. He's using both mallet and hand driving to do his work.
