Ergonomics trump the metal

When the pointy end of a too pointy blade punctures an intestine while opening the body cavity the advantages of good ergonomics becomes apparent. While gutting a trout on the other hand, pointy is desirable.

I don't know any farmers that carry expensive knives. Maybe "gentlemen farmers" do but we don't have them here.
