First, you have created a uniform space. Finally, just as potters do with a melting point measuring test piece, you determine the temperature of this space. Best, would be in the end confirmation by hardness measuring as any heat treat company will do.

It takes 15 seconds to determine Rockwell hardness. When I worked near a machine shop they would test anything I brought them for free because it was so little effort to do so (possibly an occasional basket of fruit from my orchard could have helped, but they did more than this favor)

BTW, the insulated cookie sheets were a must in the radiant electric oven. I shielded this radiant heat from everything I baked. Less so an issue in gas oven, but one still gets heating of something like a chunk of metal by radiation from the oven walls.
