I haven't a precise answer. I generally freehand grind on a grindstone of one sort or another at an angle that 'looks' about right, then freehand the honing angle, which is basically the grinding angle, and up a bit. My freehand grinding is probably somewhere near 30º, but I've never measured to find out. I guess that's because the guy, more than one actually, that taught me how to do the job a few decades ago didn't bother with setting anything to get a preferred angle, and I just followed suit.

Perhaps none of the previous is of much help to you, ha, ha, but my planes and chisels all work, and that's all that matters to me. Slainte.
