Another thing I'm curious to know: Is it worth it to spend extra time going to super-fine stones and working a perfect edge? That is, does a more perfect edge result in an edge that lasts significantly longer? I realize the answer may be different depending on if one is interested in creating a perfect surface vs. removing material.
