That pretty much describes the feel. If I were them, I'd try to use mahogany for the demos. Lots of heavy very capable planes sell really well when you put them on compliant wood!

Most of the infill demonstrations that I've seen are planing down grain on a stick less wide than the iron itself (though letting the general public try to keep a board flat and take overlapping strokes would probably be a mistake).
