I've got a small bundle, too, of white oak, picked up from a "free" pile at the school next to my parents' house years* ago. I've similarly puzzled over how to use it. It would be pretty thin and narrow after removing the various milling features. But dang, it's pretty wood.
So all I can offer is shared frustration.
*Years - I think I picked it up when Dad was still alive, and he's been gone since 2004.
