Not sure what you're planning to use for a track, but the near-ubiquitous LV ones have a 1/4" high adjustable backstop that registers to the top edge of the plane body. When I've made my own in the past I've used 1/4 ply or 1/8 hardboard for the same purpose. Either of those would prevent you from extending the infill in an "overstuffed" manner, if that's what you were alluding to.

As I'm sure you know you can use a shooting track without a backstop, and I sometimes do. You just need to be careful to keep the entire length of the plane biased to the front edge of the track, just as you would with a bench hook.
