I don't do a lot of dovetails but I do have use for skew chisels. I have a pair of reground 1/2" vintage Stanley socket chisels for bigger stuff. I reduced the lands considerably on those. For small stuff I made a pair from a set of replacement cutters for a handheld power plane. Mine are like this, but carbon steel:

Though I suppose hss would be fine for what is essentially a very light paring chisel.
