What makes you assume that the back of that chisel was hollowed on purpose?

As I've said clearly several times in this thread, Narex does not fully post-machine after hardening like most makers. That's why they can price their chisels the way they do. Their hardening process produces lower distortion than most, and that enables them to sort of get away with it, but that's the cause of the profile you saw.

I've prepared about 4 dozen Narex chisels over the years between my own and ones I've set up for others including their "premium" line. I've seen just about form of distortion imaginable in the backs of those chisels, including twist and compound profiles (bellied in the tip, hollow behind is a particularly "fun" one that shows up in their long paring chisels).

Your student needs to either decide he doesn't care about flatness, or spend some quality time preparing his chisels. If it's any consolation you get better/faster at it with practice.
