So far, regardless of having true 600x available, I have yet to find an edge that really is perfectly smooth.

And even beyond that, once something is used, or even stropped, it always gives up a little of its finish straightness.

But, boy does a properly sharpened knife cut bread well, even better than any serrated knife I've used. And the surface of cut fruit and vegetables is so smooth it looks like it's waxed, and it browns so much more slowly in open air.
