Edge angle is probably about 35 degrees, maybe 40, compared to the razor edges I'm used to looking at at less than half.

This would actually be a better knife with zwillings cryo 440 at razor hardness, which isnt the same as their knives.

I can't tell of the knife is dropping those carbide when being stropped on dursol and then chrome ox, or if it's giving those up to the linen and strop. Maybe a little of both.

I haven't driven v11 up through a razor process, but I'll give it a go. It tolerates oilstones without odd failures just fine.
