Assume we are talking about a utility knife in apron or pocket versus the bench knives we have at several work stations. My current is a Boker Congress pattern whittler, with the smaller whittling blade sharpened single bevel. Next time I put it on a stone for more than a few strokes, I will likely put the second bevel back on, as the bench knives handle most of those jobs that benefit from a single bevel.
