"Removing the wear is critical IMO, if the wear is retained you will not remove the burr entirely in your final sharpening stage and you'll find yourself resorting to excessive stropping or other method of working around a flat back"

I keep a 10X high quality lens at hand and use it when sharpening everything. Even this relatively low magnification enables one to see details of sharpening and dulling which provide me with helpful information on what needs doing, and how doing is coming along. Wear that has not been ground away and pesky burrs are readily seen.

Off topic, the lens is indispensable when sharpening someone else's knife that has an unfamiliar (to me) bevel. In short order I can determine if my "standard" bevel has overcome whatever bevel I am dealing with. For a factory grind I am usually making the edge angle more acute which can involve a lot of effort.
